3/4 c. milk
1/2 vegetable oil
1 egg
2 c. flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. fresh or drained canned blueberries or 3/4 c. frozen blueberries thawed and well drained

Directions:

Preheat oven to 400º. Grease bottoms only of a muffin pan or line with paper/tin baking cups. Beat milk, oil and egg. Stir in flour, sugar, baking powder and salt, all at once, just until flour is moistened (batter will be lumpy). Fold in blueberries. Divide batter among muffin cups. Sprinkle with sugar if desired. Bake until golden brown, 18-20 minutes. Immediately remove from pan.

Variations: Apple Muffins can be made by omitting blueberries and stirring in 1 medium apple peeled and chopped with the milk and 1/ tsp. of cinnamon. Sprinkle these with brown sugar.
