1 bag spinach
6 cups romaine lettuce, sliced
3/4 - 1 cup sliced fresh mushrooms
1 cup grated Swiss cheese
1 cup cottage cheese, rinsed and strained
10 slices of bacon, crumbled

Dressing:
1 1/2 Tbsp. poppy seeds
3/4 tsp. dry mustard
1 1/2 tsp. salt
3/4 cup sugar
3/4 cup white vinegar
1 1/2 cups salad oil
2 small red onions sliced into rings

Directions:
Directions:
Dressing is best if onions are allowed to marinate in the dressing at least 3-4 hours or overnight. I usually toss the salad with about half the dressing. Combine the dressing and the salad just before serving.
This salad is a favorite of our whole family.
