1 lb bittersweet chocolate
1 stick unsalted butter
9 large eggs separated
1 shy c granulated sugar
2 cups heavy cream
confectioners sugar for dusting

Directions:
Preheat oven to 350. Butter a 9 inch springform pan. Put the chocolate and butter into top of double boiler and heat until melted. Meanwhile whisk the egg yolks with the sugar in a mixing bowl until light yellow. Whisk a little of the chocolate mixture into the egg yolks to temper the eggs (keeps them from scrambling)- then whisk in the rest of the chocolate.

Beat the egg whites in a mixing bowl until stiff peaks form and fold into chocolate mixture. (Takes a while) Pour into prepared pan and bake until the cake is set, the top starts to crack and a toothpick comes out with moist crumbs... 20-25 minutes. Let stand 10 minutes, then remove sides of pan. Whip the cream until light and fluffy. Serve cake at room temperature dusted with powdered sugar and top with whipped cream.
