1/2 cup sour cream, 1/4 cup of oil, 1 egg,
1-1/3 cups flour, 1 cup diced rhubarb,
2/3 cups brown sugar, 1/2 tsp baking soda, 1/4 tsp salt.

Directions:
Directions:
Mix egg,sour cream, and oil in bowl.
In a separate bowl mix flour, rhubarb, brown sugar, baking soda, and salt. Mix both bowls together and fill 12 muffin tins.
Topping: 1/4 cup brown sugar,1/4 cup nuts, 1/2 tsp cinnamon, 2 tsp melted butter,sprinkle on top and Bake in 350º oven for 20 minutes or until toothpick comes out clean.
