1/2 c. (1 stick) butter
2 c. chopped onion
1 lb. dried lentils
10 c. water
2 tbsp. chopped parsley
2 tsp. salt
1/4 tsp. pepper
2 bay leaves
Directions:
Directions:
Melt butter in a large heavy saucepan. Add onions and saute until tender, about 5 minutes. Stir in lentils, water, parsley, salt and pepper. Add bay leaves. Bring to a boil. Cover, reduce heat and simmer 1-1/2 hr., discard bay leaves and serve.
