2 (8 oz.) cream cheese at room temp.
1 c. sugar]
1 tsp. vanilla
Beat together cream cheese, sugar and vanilla well. Beat in 2 eggs, one at a time until well blended.
Directions:

Place 1 vanilla wafer in bottom of cupcake paper in muffin pan. Spoon in mixture.
Bake at 350º for 20 minutes. Cool. Spoon on pie filling and top with cool whip or whipping cream.
