Ingredients:  
2 boneless, skinless chicken breasts
1 (8oz) package cream cheese - softened
2/3 c shredded cheddar cheese
1 clove garlic - minced
2 tsp chili powder
1/2 tsp cumin
1/4 tsp cayenne pepper
Handful of cilantro - chopped
3 green onions - chopped
10 oz can diced tomatoes with green chiles - drained
4-6 8 inch tortillas

Directions:

1. Season chicken breasts with salt & pepper. Cook in skillet over medium-high heat until cooked through. Transfer to plate and cool.
2. Combine remaining ingredients, except tortillas, in a large mixing bowl. Mix until well blended.
3. Once chicken has cooled, shred and incorporate into the filling mixture.
4. Spread a thin layer of the filling over a tortilla, leaving a small border clear around the edge. Roll up tightly into a spiral. Cut into 1 into thick segments.
5. Serve chilled
