2 T butter
3 cloves garlic - minced
1 c long grain white rice
2 1/2 c chicken broth
1/2 tsp salt
1/2 tsp pepper
Squeeze of lemon juice

Directions:
Directions:
Preheat oven to 375º

1. In skillet, melt butter over medium high heat
2. Add garlic & rice & cook until golden brown
3. Stir in 1 cup of broth, salt and pepper. Bring to a boil
4. Pour mixture into casserole dish, cover and bake for 25 minutes.
5. Stir in the remaining 1 1/2 cups of broth and bake for another 45 minutes. About 15 minutes before it is finished baking, stir in the squeeze of fresh lemon juice
