2c All -purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp salt
1 c fully ripe or frozen mashed bananas
1/2 c oil (veg.)
2/3 c sugar
2 eggs
1/2 c chopped nuts your choice (opt.)

preheat oven to 350º

Mix & sift first four ingreds. Combine bananas, oil,sugar, eggs in lg. bowl. Beat with rotary beater until light & foamy. Add sifted dry ingreds. & using a spoon mix until well blended. Turn into well-greased loaf pan, 81/2x41/2x 21/2 or 2 small loaf
pans. Bake for 1 hr and 10 mins or until bread is done, adjust time for smaller pans. Let cool completely before cutting.

This is my mothers recipe I have been making it for years myself. I made mini loafs and put them in my Christmas goody baskets that give to people at work and neighbors.
