2 packages (12 oz.) bulk sausage
1 medium bell pepper, chopped
1 medium onion, chopped
3 c. frozen hash browns
2 c. shredded cheddar cheese
1 c. biscuit mix
2 c. milk
1/4 t. pepper
4 eggs

Directions:
Directions:
Heat oven to 400. Grease 9 x 13 baking dish. Cook sausage, bell pepper, & onion until sausage is brown. Drain and stir together with potatoes and 1 1/2 c. of the cheese in the baking dish. Stir biscuit mix, milk, pepper, and eggs until blended. Pour into baking dish. Bake uncovered for 40 - 45 mins. until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 - 2 mins. longer, just until cheese is melted. Cool 5 mins. and serve.
