1/2 lb ground beef
1 T finely chopped onion
4 oz mozzarella cheese, cubes
1/4 c. prepared mustard
2 tubes (16.3 oz each) large refrigerated flaky biscuits
1 egg, lightly beaten

Directions:
Directions:
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add cheese and mustard; cook and stir until cheese is melted. Cool slightly.

Flatten each biscuit into a 4 inch circle; place 4 biscuits on greased cookie sheet or baking pan. Spoon 2 heaping Tablespoons of meat mixture onto each. Using a sharp knife cut out faces (triangle eyes,nose, toothy jack o' lantern grin) for the remaining biscuits; place over meat mixture and pinch edges to seal tightly. Re-roll scraps if desired and cut out stems for pumpkins. Repeat for rest of biscuits. Brush with egg. Bake at 350º for 10-15 minutes or golden brown.

This is Bradley's favorite holiday lunch. Excellent for a party or dinner before trick or treating. As the biscuits rise the facial features open up...they actually smile!
