1/2 tsp lemon zest
juice of 1/2 lemon
1 T brown sugar
1/4 c white wine vinegar
1/3 c extra virgin olive oil
1/2 tsp sweet basil
1/2 tsp oregano
1/4 tsp garlic powder
1/4 tsp pepper
1 1/2 tsp salt

1 1/2 lb boneless chicken breast

1/2 c dry Italian seasoned bread crumbs
1/4 c grated Parmesan cheese

Directions:

Combine marinade ingredients in a gallon size plastic bag.
Rinse & dry chicken. Trim any fat. Cut in 1-inch cubes. Place chicken in bag.
Marinate 30 minutes at room temperature, or up to 6 hours in refrigerator. Turn bag at least once.
Drain chicken & discard marinade.
Thread chicken cubes onto skewers.
Mix bread crumbs & cheese in a shallow dish.
Roll chicken skewers in mixture to coat.
Grill or broil about 3 minutes on each side, until chicken is done/ Serve hot, warm, or at room temperature.

Serve as appetizer on short skewers.
Slice breasts lengthwise and flatten slightly instead of cubing. Broil 5-6 minutes each side. Use low broiler heat if available, or lower oven rack.
