11/2 lbs Fresh or frozen Haddock
4-5 potatoes(peeled, cubed)2
1 lg onion ( diced)
2 cans evaporated milk
1 stick of real butter
salt & pepper to taste
salt pork( sliced if you can find it)

Directions:
Directions:
Put salt pork in bottom of a pot and fry on medium heat until crispy.Remove salt pork from pan and discard. Add potatoes with onions , with enough water to just cover them-cooked until fork tender. At that point add Haddock and cook until fish turns white (maybe 10 minutes).
Turn off heat,add 2 cans evaporated milk and 1 stick of butter.
Better if it sets a while,but can eat immediately.
