1/4 c. butter
1/2 c. Onion (finely chopped)
1/2 c. Carrot (finely chopped)
1/2 c. Celery (finely chopped)
1 tsp. fresh, chopped Garlic
1/4 c. Flour
1 1/2 tbsp. Cornstarch
2 (14.5 oz.) Chicken Stock (Swansons 1/3 less Sodium)
4 c. Milk (2% or whole)
1/8 tsp. Baking Soda
1 lb. grated(finely chopped) Velveeta
1 c. popped Popcorn

Melt Butter in large soup pot. Saute Onions, Carrots, celery and Garlic over medium low heat until vegetables are soft. Stir in Flour and Cornstarch and cook until bubbling. Add Stock and bring to a simmer. Add Milk gradually, blending until smooth. DO NOT BOIL!

Remove pan from heat. Add Baking Soda and Cheese at same time, stirring constantly until smooth. Return pot to stove over medium low heat and simmer 10 - 15 minutes, until Cheese is melted and soup is hot.

Serve immediately or if held, warm soup over lowest setting.

To serve, place in large soup bowl. Sprinkle with a small amount of Cayenne Pepper and Paprika. Garnish with Popcorn.
