1 sheet frozen puff pastry dough (1/2 of 17 oz package)
1/2 c sugar
1 tsp cinnamon

Preheat oven to 425º.
Thaw puff pastry 20 min., or according to package directions.
Stir together sugar & cinnamon.
Cut pastry in half lengthwise. Roll each piece out to an 11 X 7-inch rectangle. Sprinkle each piece with 2 T plus 1/2 tsp of mixture.
Working with one piece of pastry at a time, fold both short edges toward the center so that they meet in the middle. Sprinkle the top of the folded piece with 2 T of mixture. Fold each side in half again, then fold in half one last time and press together gently so that the 8 layers stick together.. Repeat process with remaining piece of pastry.
With a sharp knife, cut folded piece of pastry crosswise into 1/2 inch slices. Place them with cut side up on 2 ungreased baking sheets.
Bake until they are golden brown & crisp, 10 to 12 minutes. Rotate sheets after 5 minutes for even baking. Remove to wire to cool for at least 5 minutes. Serve warm or at room temperature. Store in airtight container.
