1 tsp. Pepper
1 tsp. Garlic powder
1 tsp. Onion powder
1 tsp. Paprika
1 tbsp. Parsley
Olive oil
2 C. leftover Mashed Green Onion Potatoes
1 egg

Preheat oven at 325º Rinse Chicken and place on paper towel and pat dry. Place in a glass baking dish and drizzle 2 tbsp. of Olive oil. Sprinkle all spices over entire Chicken and rub to coat completely. Bake for 2 hours, basting 2 times through out cooking. When Chicken is almost done put about a 1/2 cup of flour in a shallow bowl.
Take out cold leftover mashed potatoes and put in small mixing bowl and add a tsp. salt, 1/2 tsp. pepper and egg and mix. Take about 1/4 c. of this mixture and make a ball and place in flour bowl. Roll easy, as you coat completely with flour. Gently, mash flat while keeping it all coated with flour. Place on flattened paper muffin cup till all 8 pancakes are formed and Chicken is done. Remove Chicken from oven and place on serving dish. Tent slightly with foil for 20 minutes. Heat a small non stick fry pan on medium high with a couple of tbsp. butter (careful not to burn). Place one, or two pancakes at a time gently into the pan, so not to splash and brown for a couple of minutes. Carefully, turn over with spatula and add a bit more butter and brown. Remove and place on plate till all eight are done. Carve Chicken and serve immediately.
