1 whole chicken, split in half or 4 half breasts
1 tbsp. Ancho/Pasilla Chili powder
1 Bay Leaf
1/2 Tbsp. Cumin
2 tsp. Onion powder
2 tsp. Salt
1tsp. Pepper
1/2 tsp. Oregano
2 tbsp. Olive oil

Pre heat oven 325º Spray an 11x13 glass baking dish with Pam. In a large bowl mix all dry ingredients except Bay leaf. Rinse Chicken and blot dry with paper towel. Place Chicken in dry ingredients bowl and drizzle Olive oil over chicken and rub incorporating with the dry ingredients. Place Chicken skin side up with Bay leaf in glass dish and bake uncovered 2 hours. Baste half way through
