Ingredients: 6 medium-sized potatoes, diced 4 slices bacon, diced 1 onion, thinly sliced and cut up 1 T. sugar 1 tsp. salt 1/4 tsp. pepper 1 tsp. mustard 1/2 c. cider vinegar 2 T. chopped parsley water (1/4 c. for pressure cooker; to cover potatoes, if not using pressure.)

Directions:Heat pan and brown the bacon pieces. Pour off excess dripping. Add potatoes and onion. Add combined sugar, salt, pepper, mustard, vinegar and water to cover potatoes. Mix well. If you don't have a pressure cooker, just cook the combination for about 10 minutes, then begin checking every few minutes until the potatoes are cooked. Take care not to overcook the potatoes. IF you have a pressure cooker, decrease the water to 1/4 c. Add the water to all the ingredients in the pan as instructed above. Put the lid on the pan securely and cook according to cooker instructions. |

Notes: Does anyone have a pressure cooker? No? Not to worry, last time I made this recipe, I put it in the heavy pressure cooker pan, but didn't actually pressure-cook it, so if you have a nice heavy saucepan with a lid that fits well, it will work fine. Dad found this recipe years ago and was the first one in our family to try it. He adjusted the ingredients, and I'm including it just the way he adjusted it. This makes a tasty and not gummy potato salad.
