5 cups peeled, chopped pears
1 seeded chopped lemon
1 cup brown sugar
1/4 t. cayenne pepper
2 chopped, seeded red bell pepper
1/3 cup chopped ginger root
2 minced garlic cloves
1 cup currents
2 tbs. curry
2cups cider vinegar

Directions:

Simmer all ingredients until you have a thick sauce, approximately 2 hours, stirring frequently. Place the chutney into hot, sterilized jars and seal. Process 15 min. in a boiling water bath.
