Ratio: 1 cup sugar to 1 grated coconut.

Dampen sugar; boil until sugar dissolves. Add coconut to sugar and boil until mixture thickens (about 20 minutes) stirring constantly.Test the mixture by putting a little onto moist table or counter top, mixture should harden quickly. If ready, just before taking off stove, add vanilla and ginger. Food coloring optional.
Ratio: 1/4 teaspoon to 2 coconuts.

Spoon remaining mixture quickly on moist table or counter top to desired size. (mixture hardens fast).
