4 medium tomatoes
1 large or 4-5 Persian cucumbers
1 bell pepper
1/2 onion - red preferred
1/2 - 3/4 c. pitted Kalamata olives
1/2 - 3/4 c. crumbled feta cheese
for the dressing:
1/2 tsp. dry oregano
2 T. lemon juice
1/2 tsp. minced garlic
black pepper to taste
1 T. wine or apple cider vinegar
6 T. olive oil

Directions:
Directions:
Whisk together the dressing ingredients and set them aside.
Chop vegetables into chunks and place in a bowl. A short time before serving, add the crumbled feta cheese, whisk the dressing again and pour it over the vegetables.
