DERRITE la mantequilla en una cacerola pequeña. Incorpora la harina, la sal y la pimienta. Agrega poco a poco la leche evaporada y el agua. Cocina esta mezcla a fuego medio, revolviéndola de vez en cuando, hasta que rompa a hervir. La receta rinde 3 tazas.

PARA PREPARAR LA SALSA DE HIERBAS:
PREPARA 1 taza de Salsa Blanca agregándole a la mantequilla 1 diente de ajo finamente picado. Agrégale a la mezcla de harina 1/4 de cucharadita de orégano seco, albahaca o salvia. Prosigue según se indica. Rinde 1 taza.

PARA PREPARAR LA SALSA DE QUESO:
PREPARA 1 taza de Salsa Blanca, pero utiliza sólo 1 cucharada de mantequilla, 1 cucharada de harina de uso general y 1/3 de taza de agua. Elimina la sal. Prosigue según se indica. Incorpora 1 taza (4 oz) de producto de queso procesado, ya sea el desmenuzado o en cubitos, y revuelve hasta que se derrita. Rinde aproximadamente 1 1/2 taza.

PARA PREPARAR LA SALSA DE QUESO CHEDDAR:
PREPARA 1 taza de Salsa Blanca, pero utiliza sólo 1 cucharada de mantequilla, 1 cucharada de harina de uso general y 1/3 de taza de agua. Prosigue según se indica. Incorpora 1 taza (4 oz) de queso cheddar desmenuzado y revuelve hasta que se derrita. Rinde aproximadamente 1 1/2 taza.
