1 can cooked salmon
2 slices stale bread
1 egg
1/2 tsp. ground coriander
flour
House-Autry Chicken Breader
oil
salt and pepper (to taste)

Directions:
Directions:
Put salmon in a bowl....do not drain. Remove any bones. Crumble bread and put over salmon. Add egg, coriander, salt & pepper. Mix well. If mixture feels too wet, add a small amount of flour. Form into small to medium patties. Place about 1/4 to 1/2 inch of cooking oil in skillet. Heat over med-high heat. Roll each patty in the chicken breader. Place patties in hot oil. Cook until brown, turning once to brown both sides. Remove to platter lined with paper towels to absorb oil. Serve hot.

Mama taught me how to make these. This was a frequent dinner in our house when the kids were growing up.....and every one of them loved these! I usually served these with mac and cheese and peas.
