Directions:Saute onions in 1-2 tbsp oil until glossy. Add chicken and stir with a fork . Pour sauce on top of chicken and let simmer for chicken to absorb sauce. Add tobasco sauce and simmer until juice is absorbed. Remove from heat and set aside. Fold a few paper towels in fourths to absorb the grease from tortilla shells. You will also need a couple more folded together to absorb grease from the top of shells once folded. In another pan,(I use a cast iron pan) add oil. When oil is hot put in one tortilla just for a couple of seconds. Flip over for about 2-3 more seconds. You want the tortilla to be soft and pliable. Remove from heat and place on paper towels. Pat top of tortilla to remove excess oil, spoon a small tablespoon of mixture onto tortilla , roll up and secure with a flat toothpick , place back in oil and cook until crispy on all sides. Remove from pan and put on a paper towel lined plate. Repeat one by one until finished. Add sour cream to taste. |

Notes: This is very messy and you will need to work fast. Once you have started the frying process, change paper towels when needed as they will absorb a lot of the oil. You can prepare the tortillas first but be sure to pat dry if doing it this way, Roll all of them up and then fry, I like doing mine as I go.
