1-2 whole chickens boiled and deboned-
cooking oil
1 pkg corn tortilla shells ( flat)
1-2 cans tomato sauce, if using 2 chickens use 1 large and 1 small can sauce
1-2 large onions sliced in strips ( thin)
tabasco sauce to preference
sour cream

Directions:

Saute onions in 1-2 tbsp oil until glossy. Add chicken and stir with a fork . Pour sauce on top of chicken and let simmer for chicken to absorb sauce. Add tobasco sauce and simmer until juice is absorbed. Remove from heat and set aside.
Fold a few paper towels in fourths to absorb the grease from tortilla shells. You will also need a couple more folded together to absorb grease from the top of shells once folded. In another pan,(I use a cast iron pan) add oil. When oil is hot put in one tortilla just for a couple of seconds. Flip over for about 2-3 more seconds. You want the tortilla to be soft and pliable. Remove from heat and place on paper towels. Pat top of tortilla to remove excess oil, spoon a small tablespoon of mixture onto tortilla , roll up and secure with a flat toothpick , place back in oil and cook until crispy on all sides. Remove from pan and put on a paper towel lined plate. Repeat one by one until finished. Add sour cream to taste.

This is very messy and you will need to work fast. Once you have started the frying process, change paper towels when needed as they will absorb a lot of the oil. You can prepare the tortillas first but be sure to pat dry if doing it this way, Roll all of them up and then fry, I like doing mine as I go.
