8 Roma tomatoes, diced and drained
1/2 white onion
1/2 - 1 Jalepeno pepper, seeded and minced
1 bunch Cilantro, roughly chopped
1 lime, juice of
3-4 shots of your favorite red pepper sauce
1 tsp. garlic powder
1 pinch of sugar
Salt and pepper, to taste

Directions:

Dice tomatoes and place in colander to drain for 10 minutes, then place in bowl.
Mince onion and jalepeno together and add to bowl. Add cilantro, lime and hot sauce and mix will. Add remaining ingredients and mix again. Place in refrigerator in airtight container. Allow to chill completely before using to allow flavors to blend.
