Vegetable oil for deep frying
2 cups all purpose flour
1 tbsp ceyenne pepper
Salt and ground pepper
1 egg
2-1/2 cups ice cold club soda
Ice cubes
1 large onion, sliced 1/4" thick

Directions:
Directions:
Heat the oil in a deep fryer to 375º.
In a small bowl, mix together the flour, cayenne pepper, a bit of salt, pepper, egg, and club soda. Before dipping the oinion rings, add a few ice cubes. The mixture must be very cold. Dip the onion slices into the batter until all are coated. Set aside. Repeat with remaining rings. Deep fry the rings a few at a time, until golden brown, 2-3 minutes. Remove and drain on a paper towel. Season with salt and pepper.
