1/4 lb. thickly sliced bacon
1/4 c. olive oil
2 large white onions, thinly sliced
1/2 c. balsamic vinegar
1/4 c. sherry vinegar
1/2 c. water
1 tsp. salt
1/4 tsp. ground white pepper
2 tsp. sugar
1/2 tsp. cayenne pepper
TUNA STEAKS
4 tuna steaks (about 5 oz. each)
2 T. olive oil
Salt and ground white pepper

To make the marmalade, cut the bacon crosswise into strips 1/2 inch thick.
In a saute pan over high heat, warm the 1/4 cup of olive oil. Add the bacon and saute until slightly crisp, about 2 minutes. Add the sliced onions and continue to saute until the onions are golden brown, about 10 minutes.
Stir in the balsamic vinegar, sherry vinegar, water, salt, white pepper, sugar and cayenne. Bring to a boil over medium heat, then continue to boil until the liquid evaporates completely 12-15 minutes.

About 5 minutes before the marmalade is ready, cook the tuna steaks. In a separate saute pan over high heat, warm the 2 tablespoons of olive oil. Sprinkle both sides of the tuna with salt and white pepper to taste. Place the steaks in the hot pan and cook, turning once, until done to your liking, 1-2 minutes on each side for medium rare, depending upon the thickness of the steaks.
Transfer the tuna steaks to warmed individual plates. Top with onion marmalade and serve immediately.
