4 skinless chicken breast diced ( bite size)
1/2 green pepper, diced
1 small onion, diced
1/2 red pepper diced
garlic, fresh or powder, to taste
salt pepper to taste
dices tomatoes ( optional)
1 box penne pasta
1 jar favorite spaghetti sauce or homemade sauce
garlic bread
2-4 tbsp butter or olive oil

Directions:
Directions:
In a large skillet, brown chicken in 2 tablespoons butter. Remove from skillet and set aside. Saute vegetables. Combine chicken and vegetables and saute in 2 tbsp oil or butter to desired tenderness. Add diced tomatoes to chicken and saute 2 minutes. Add sauce , cover and simmer. Meanwhile, cook pasta and drain . Serve pasta with sauce over it.

I serve garlic toast with mine. Before putting the sauce on the pasta, I sprinkle a little Parmesan cheese over the pasta. You can also add veggies of your choice such as celery, carrots or zucchini.
