1/2 cup water
4 eggs whites
1 tsp vanilla
1 oz almonds
2 tbls cocoa
1 oz chopped candied orange peel

Butter and flour 2 baking sheets, shaking off the excess, or use nonstick baking sheets
For the meringue: heat sugar with water over low heat until dissolved
Bring to a boil and boil without stirring until the syrup forms a thick thread between your finger and thumb when a little is lifted on a spoon
Meanwhile, stiffly whip the egg whites
Gradually pour in the hot sugar syrup, whisking constantly
Continue whisking until meringue is cool it will be glossy and very stiff
Beat in vanilla
