2 1/2 c flour
1 T baking powder
1/2 tsp salt
8 oz cold unsalted butter, cut into 12 pieces
1/2 c sugar
2/3 c milk

Optional:
1/2 -2/3 c dried fruit (raisins, craisins, etc.) and 1 T orange zest OR
1 c fresh fruit (peaches, cherries, etc.) and 1 tsp cinnamon

Optional:
1 T lemon zest added to mix plus topping of 2 tsp fresh lemon juice & 2 T sugar

Directions:

Preheat oven to 425º.
Combine flour, powder & salt in large bowl. Cut in butter with pastry blender until mixture resembles coarse meal. Add sugar; toss to mix.
Add milk (and optional ingredients if used) and stir with fork until soft dough forms.
Form dough into ball. Knead gently on floured surface 10-12 times.
Cut dough in half. Knead each half briefly into ball; pat each half into a 6-inch circle. Cut each circle into 8 wedges.
Place scones on ungreased cookie sheet, slightly apart. Add optional topping.
Bake for 12 minutes, until firm to touch & lightly browned on bottom. Place on cotton cloth to cool. Cool completely before serving.

Adjust sugar to any fruit ingredient used. Brush tops with milk & sprinkle with sugar if desired.
Substitute Splenda if desired.
Half recipe works well.
