Eggplants, peeled, cubed
2 T. onion, chopped
3 slices Velveeta cheese
6 - 8 saltine crackers
1 tsp. butter
1 (10.5-oz.) can cream of mushroom soup
Salt and black pepper to taste

Directions:
Directions:
Preheat oven to 350º . Boil eggplant, drain. Saute chopped onions in butter. Combine all ingredients and pour into greased 2-quart casserole. Bake for 30 minutes or until bubbly.
