2 C. Boiling water
3- 3/4 C. flour
1/3 C. instant potato flakes
1/4 C. Dried Milk Powder
2-1/2 Tsp dried yeast
1-1/2 Tsp salt
2 Tbsp olive oil + 1 Tbsp to grease pan
1/4 Tsp Salt.
1/2 Tsp fresh rosemary
1/4 Tsp fresh thyme
1/4 Tsp fresh oregano
1 Tsp Fresh Garlic minced
1/4 tsp fresh Basil

Directions:
Directions:
place the boiling water and 2 cups of flour in a large bowl and beat for several minutes until smooth. set a side to cool. once cool Add 1/8 Tsp of the yeast and mix. Cover and allow to sit overnight or for several hours.

The next day or after several hours:
whisk the potato flakes, with the remaining flour, yeast, dry milk, and salt. beat to the batter a little bit at a time. Add in 2 Tbsp of the olive oil and beat by hand with a large spoon for 8 - 10 minutes. until begins to hold together, and becomes smooth and shiny. Place dough into a well oiled bowl, and cover for about 30 minutes. Pull sides of dough in and fold (do not punch) do this a couple of times, recover and allow to rise again for 30 minutes.

Drizzle 2 Tbsp of olive oil into a 12 inch round pan. Put dough into greased pan and stretch dough to fit. allow to rise 30 minutes covered.

Preheat oven to 400º remove plastic and dimple with finger tips the dough. Brush with olive oil and sprinkle with garlic and herbs. Bake for 25-30 minutes. Remove from pan and allow to cool for 15 minutes before eating.
