3-lb. chicken, cut in 8 pieces
salt
freshly ground pepper
3 Tbsp. bacon fat
1/2 onion, chopped
4 c. sliced okra
1/2 c. chopped sweet red pepper
1-1/2 c. chopped fresh or canned tomatoes
2 tsp. basil, crumbles
1 c. cooked rice

Directions:

Rinse the chicken, pat dry, and sprinkle with salt and pepper.
Melt the bacon fat in a large skillet and brown the chicken on all sides. Remove from pan and set aside.
Add onion, okra and pepper to the skillet and cook over medium heat, stirring constantly, for 5 minutes. Stir in tomatoes, basil, and 3 cups boiling water. Mix in the chicken and about a teaspoon of salt. Cover and simmer 30-40 minutes.
Add the cooked rice, mix well, and cook 5 minutes more to heat through.
