Herb Marinade:
½ cup salad oil
¼ cup lemon juice
1 teaspoon each salt, marjoram and thyme
½ teaspoon pepper
1 clove garlic, minced
½ cup chopped onion
¼ cup snipped parsley

Kabob:
2 pounds boneless lamb, cut in 1 ½ inch cubes
Green peppers, quartered
Sweet red peppers, quartered
Thick onion slices

In deep bowl, mix marinade ingredients. To marinade, add meat; stir to coat. Refrigerate overnight or let stand at room temperature 2 or 3 hours; turn meat occasionally.

Fill skewers with meat cubes, chunks of pepper, and onion. Broil over hot coals to medium rare, turning frequently and brushing often with melted butter. Serves 4.

This Shish Kebab I have used for outdoor parties for 40 years. I use beef and add potatoes, pineapple, etc. It is the marinade that makes it good. It is best with fresh herbs.
