Tender , small zucchini, sliced 1/4 inch thick
onion, cut in half vertically and then sliced into thin wedges
salt
pepper
butter
shredded Parmesan cheese(not the dry kind) the real stuff

Preheat oven to 375º
Melt 2-3 Tbsp. of butter in a 9x9-inch baking dish, or more butter if using a larger dish and squash. Slice zucchini into appropriate size mixing bowl,add wedged onion in the desired amount. For 4-5 small squash, I use one small to medium onion. Sprinkle with sale and pepper to taste. Pour the melted butter over the squash and stir to combine everything. Place squash in baking dish. Sprinkle liberally with Parmesan cheese.Be sure to use a good cheese. Bake for 20-25 mins., or to the desired doneness. I'm careful not to over cook it since I don't like it soft.

When teaching in Gallup, NM. (around 1964) I was invited to dinner and the lady served this side dish. It has become my very favorite way of preparing zucchini. It is crisp the way I like it.
