1 c. chopped onion
1 c. chopped sweet pepper
3/4 lb. lean ground beef
2 8-oz. cans of seasoned tomato sauce (or comparable amount of chicken broth)
1 1/2 c. (12 oz.) corn
1 c. chopped ripe olives
1 clove garlic, chopped fine
2-3 tsp. chili powder
dash of pepper
1 1/2 c. grated sharp cheddar cheese
For corn meal topping:
3/4 c. yellow corn meal
1/2 tsp. salt
2 c. cold water
1 T. butter

Directions:
Directions:
Preheat oven to 375º. Cook onion and pepper in a little hot fat until tender. Brown meat separately, drain fat, add onion and pepper. Add the next 6 ingredients. Bring to a boil and simmer for a few minutes. Add cheese to meat and stir until melted. Pour into 11 1/2x7 1/2 x 1 3/4 greased baking dish.
Stir corn meal and salt into cold water. Cook and stir until thick. Add butter, mix well. Spoon over hot meat mixture in 3 lengthwise strips. Bake in 375º oven for about 40 minutes.

This recipe is easy enough, but time-consuming. It's nice for cold weather when you want your oven to warm up the kitchen! From the ubiquitous Better Homes and Gardens New Cook Book, the one my Mom gave me when I got married - the book is finally fraying and falling apart.
