1/4 c. oil
1 med. onion, diced
1/2 pound mushrooms, sliced
2 eggs, lightly beaten
1 T. soy sauce
1/4 pound thick-cut pastrami, cubed
salt
black pepper
1 c. orzo, uncooked

Directions:
Directions:
Heat oil in a large pan over medium heat. Add onions; saute until light brown, about 15 minutes. Add mushrooms and saute another 3 minutes.
Reduce heat to low and slowly add beaten eggs, mixing continually so eggs don't scramble. Add soy sauce. Stir in pastrami. Season with salt and pepper to taste. Remove from heat.
Cook orzo acc. to pkg. directions. Strain and combine with pastrami mixture. Serve warm.
