Pineapple Cheese Pie Recipe

3/4 stick of butter
1 /3/4 c. flour
4 tbsp. sugar
2 small eggs
1/2 tsp. salt
1/2 tsp. baking powder
1 medium can crushed pineapple
1 box vanilla pudding

Cheese Filling:
2 (8oz.) packages of cream cheese
8 tsp. sugar
3 tsp. flour
4 well beaten eggs
3 1/2 c. milk
2 tsp. vanilla
2 tsp. lemon juice (optional)

Crust: Mix all of the ingredients by hand. Dough is very pliable and with your hands you can mold into a 3 qt. oblong pan (11 X 13 X 3) Next, drain can of crushed pineapple - saving the juice. Use one box of vanilla pudding and one cup of the pineapple juice and cook until thick. Then add well drained pineapple and mix well. Set aside until cool then spread in bottom of crust. Filling: Cream the cheese with beater until smooth. Add slowly all remaining ingredients in order above. If you use lemon juice add it last but do not beat with mixer. Bake at 400º for 15 minutes. Lower temperature to 300º and cook for additional 45 minutes. Sprinkle with cinnamon when cool.
