3 lbs. red-skinned or Yellow Finn potatoes
1/2 c. milk
1 T. butter
1/2 c. basil pesto
1 clove garlic, chopped very small, or garlic powder.

Directions:
Boil potatoes in salted water to cover until very tender. Drain them well and return them to the pan. Put pan back on burner and shake over medium heat until potatoes are dry. Peel all or half the potatoes. (If you are going to peel all of the potatoes, or just leave a small amount of peel on them, it is probably easier to peel them before cooking. If you do that, though, you will have to be very careful that the potatoes don't stick to the pan as you are drying them - perhaps a small amount of extra butter would help). Smash the potatoes with a large spoon or fork and blend in the milk and butter. Add salt and black pepper, 1/2 c. basil pesto (or plain dry basil) and a clove of chopped garlic or equivalent amount of garlic powder.
