1 1/2 T. cornstarch
1/4 to 1/3 c. brown sugar
1/2 c. cold water
4 c. sweetened sliced peaches
1T. butter
1 T. lemon juice
for Biscuit Topping:
1 c. sifted flour
1 T. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 c. butter
1 egg, slightly beaten

Directions:

Mix first 3 ingredients and add peaches. Cook and stir until thickened. Add butter and lemon juice.
For the biscuit topping, sift together 1 c. already sifted flour, 1 T. sugar, 11 1/2 tsp baking powder, and 1/4 tsp. salt. Cut in 1/4 c. butter until dough is like coarse crumbs. Mix 1/4 c. milk and the egg and add all at once to the dry ingredients, stirring just to moisten. Pour the peach mixture into a greased 9" baking dish. Add the topping by spoonfuls on top of HOT peaches. Sprinkle with sugar if you wish. Bake in 400º oven for 20 minutes or until the topping is done.

The topping can really soak up the fruit and juice, so I usually add more fruit than the recipe calls for - 1/2 to 1 c. more. This is from the old Better Homes and Gardens New Cook Book that my mom gave me when I got married.
