2 eggs
1/2 t salt
1/2 t dry mustard
2 C salad oil
2 hard-cooked eggs
2 garlic cloves, chopped
3 sprigs chopped parsley
2 green onions, chopped,
2 chopped celery stalks, chopped
2 T lemon juice
2 T vinegar

Directions:
Directions:
Beat eggs on low in blender. Add salt and mustard. With blender running, add oil in a very slow stream...very slowly! You are forming an emulsion like mayonaise, and it will turn creamy looking. Add lemon juice and vinegar...then rest of ingred. Process briefly. Chill in fridge in a covered container...mix well before serving. Flavor improves with age!

This is a really special dressing. Use pasteurized eggs if raw bothers you. The Bard Door has been in San Antonio since the 50's and has really good food. I judge restaurants by whether I can remember a food eaten there...have always remembered this dressing!!!!!
