2 sticks Parkay margarine, room temp
1/2 C brown sugar
1/4 C white sugar
1 egg yolk
1/2 t vanilla
1 T milk
2 C flour

Directions:
Directions:
Cream Parkay with sugars. Add rest of ingred and mix till light and fluffy...used to take lots of elbow grease but a snap with a Kitchenaid mixer. Make into several long rolls on lightly floured board. Wrap in plastic wrap and chill. When ready to use, slice dough thin and bake on cookie sheet at 375 for 10-12 minutes or golden brown.

This recipe has been a favorite in my family for many years. It doesn't taste the same if you don't use Parkay. At Christmas I roll the dough out thin and sprinkle with colored sugar...then roll up like a jelly roll and chill...makes pretty cookies when sliced and baked. Dough freezes well.

Or an even faster Christmas cookie...roll logs in colored sugar to have a pretty rim around edges when sliced.
