1 recipe corn bread
6 slices day old white bread (like Pepperidge Farm)
1/3 to 2/3 C pickled jalapeno peppers,chopped, seeded, and drained
1/4 to 1/2 C pickled jalapeno juice
1/4 C bacon drippings, butter, or margarine
2 C chopped green onions
2 C chopped celery
1 C water
1 t salt
1/4 t black pepper
about 1 C chicken or turkey broth

Directions:
Saute onions and celery in bacon drippings till soft. Crumble corn bread in large bowl...add white bread, peppers, and juice. Toss to mix. Add onions and celery. Pour broth and hot water over bread mixture and toss. Season with salt and pepper. Pile loosely in 9x13 greased baking dish and bake at 375 for 30 minutes.

This dish gets hotter if you make it the day ahead...so adjust the peppers accordingly till you know how you like it. I like the pepper flavor but not too much heat so I chop them very fine and use the minimum amounts.
