4 C sliced rutabaga or winter squash
1/2 t grated fresh ginger
l large clove of garlic, minced
2 T butter
3 T flour
2 C milk
salt and pepper
1/4 C fresh
white bread crumbs, not canned
3 T grated Swiss cheese

Directions:
Directions:
Steam rutabaga in basket with ginger and garlic over 1 inch water till almost tender. Remove and boil down water to 1/4 C. Melt butter in a 2 qt pan...blend in flour and cook gently for a couple of minutes (get rid of raw flour taste). Remove from heat and beat in hot vegetable liquid and milk. Simmer till slightly thickened...add salt and pepper. Fold in rutabaga and turn into a 6 C buttered casserole dish. Top with crumbs and cheese.

My grandparents, the Hafleys, loved rutabaga...and now so do I...since my 40's. One day I dropped in at their house at lunchtime...sniffed an interesting smell that turned out to be rutabagas...and have adored them ever since. They're a very hard, winter vegetable...peeling, chunking, and thin slicing in the food processor speeds up the process.
