2 frozen packages of coconut thawed ( 1 fresh coconut-call me to get how to do the fresh)
1 White Duncan Hines cake mix
1 cup Coconut oil -- Or 1 cup coconut milk with 1/2 cup powdered sugar mixed together

7 minute Icing
4 egg whites
1 1/2 cup sugar
1 tsp white corn syrup
1/8 tsp salt

Bake cake in 2 round cake pans
take cakes out of pans while warm and place on something with an edge .Poke cake with toothpick all over. Pour coconut oil over warm cake -it may run all over if it isn't on something with and edge. Let cool
Icing
In a double boiler on the stove mix all ingredients and with an electric mixer mix until it peaks for about 7 min non stop.
Spread in between layers and on top then sides. Sprinkle with the thawed frozen coconut
