6 medium baking potatoes,
Oil for frying,
salt,
1 tbsp. fresh dill or parsley ( you can use dry
herbs).

Directions:
Peel and rinse potatoes, and cut in half lengthwise. Cut crosswise into scant 1/4-inch
slices. Blot them dry with a towel.
Heat oil in a large skillet. When it bubbles, add the potatoes and spread in a single layer.
Saute over moderate heat for 5-6 min., or until
the slices are golden on the bottom.
With a spatula turn the slices and saute for
another 4 min. on the other side.
Sprinkle with salt.
Turn the potatoes again, sprinkle with salt,
lower the heat and cook for about 7 min. more
until the slices can be pierced easily with knife.
Sprinkle the potatoes with chopped dill and
serve immediately.

Sometimes I do it for breakfast and exactly before serving break couple eggs on the top
of potatoes.
On weekend I add slices of garlic in the end
of cooking.
