2 c. cooked rice
1 pkg. (10 oz.) frozen chopped spinach (cooked & well drained).
1/2 lb. Velveeta (can be Light) process cheese (cubed)
1/3 c. chopped onion
1/3 c. red pepper
3 eggs beaten
1/8 tsp. black pepper

Directions:
Heat oven to 350º. Mix all ingredients in large bowl. Spoon mixture into a greased 10" x 6" baking dish and smooth surface with a spatula. Bake 30 minutes. Let stand 5 minutes before serving. Cut into squares.
