6 medium potatoes
2 c (8 oz) shredded cheddar cheese
1/4 c (1/2 stick) butter or margarine
2 c dairy sour cream at room temperature
1/3 c chopped green onions (tops also)
1 1/2 tsp salt
1/4 tsp pepper
Buttered Bread Crumbs
Paprika

Preheat oven to 350º

Cook potatoes in skins. Cool. Peel and coarsely shred. In a saucepan over low heat, combine cheese, butter and stir constantly until almost melted. Remove from heat, blend in sour cream, onions, salt, pepper.
Add potatoes, stirring lightly.
Turn into a 13X9 buttered casserole.
Sprinkle with bread crumbs and dot with 2 tbsp butter.
Sprinkle with paprika.
Bake for 40-45 minutes

**May be prepared and frozen to be baked at a later date. If that is the case, must be thawed to room temperature before baking.
