1 c graham cracker crumbs
1/2 c finely chopped walnuts
1/4 c firmly packed light brown sugar
1 t cinnamon
1/4 c (1/2 stick) unsalted butter, melted

Filling:
1 1/2 lb cream cheese, softened
3/4 c sugar
4 eggs
1 t vanilla extract

Topping:
1/3 c sugar
1/2 t cinnamon
4 c apples, peeled, cored and thinly sliced
1/2 c chopped walnuts

Preheat oven to 350°F.

First, make the crust. In a large bowl, toss together graham cracker crumbs, walnuts, brown sugar and cinnamon. Add the butter and stir until well blended. Sprinkle evenly in the bottom of a 9-inch springform pan, then press to cover bottom and extend slightly up the sides. Bake for 10 minutes, then let cool.

For the filling, beat cream cheese and 3/4 cup sugar in a large mixing bowl at medium speed until smooth. Add eggs, one at a time, blending well after each addition. Blend in vanilla and pour into prepared crust.

For the apple topping, stir together 1/3 cup sugar and cinnamon in a small bowl. Toss the cinnamon-sugar with the apples and coat evenly. Carefully spoon apple mixture over filling and sprinkle with walnuts.

Bake in preheated oven for one hour. Turn off oven and let cheesecake sit in hot oven for 10 minutes longer. Remove and cool slightly. Loosen cake from the rim and remove outside ring. Chill completely before serving.

I've made it with and without peeling the apples. The peel adds some color to an otherwise rather colorless dessert, but stays a little chewy. Pretty popular either way and nice to have something a little different than classic cheesecake.
