1 3/4 c. plain flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
3/4 c. milk
1/3 c. cooking oil
1 egg, beaten
1 c. blueberries, fresh or frozen
1 tsp. grated lemon rind
2 Tbsp. sugar

Directions:

Sift dry ingredients together.
Combine milk, egg and oil, and add to dry ingredients. Mix just enough to moisten.
In a small bowl, gently mix blueberries, lemon rind and 2 Tbsp. sugar. Add to above mixture.
Stir only enough to blend in berries. Fill muffin cups 1/2 to 3/4 full. Bake at 375º to 400º for about 25 minutes, until lightly browned.
While muffins are still hot, brush tops with butter and sprinkle with sugar.
